Farm to Axle, a Food Truck for Penn State

The focus of this project was to create a new sustainable channel to feed Penn Staters while also providing additional student learning opportunities and raising awareness about the Student Farm. Students of the Sapphire APEX Team developed a go-to-market strategy and related business plan for a food truck that would serve the University Park campus. Assessment included: market opportunities for a food truck on the Penn State campus, market constraints including competitors along with regulations & University policies, and recommendations and a related business plan with a business model, target customers, offerings, marketing mix, staffing levels, food storage and preparation plan along with supporting rationale to included proforma financials.
