It’s the last week of the summer CSA program and life on the farm is in full swing. We packed this week’s boxes full of everything that’s in season now!

On behalf of the Summer 2016 Student Farm Team, pictured above (minus John who was out in the field when this photo was taken), would like to thank our CSA members for supporting us this summer. If you are interested in joining our CSA this fall, please contact Leslie Pillen at lrp143@psu.edu.

The fall CSA will feature crops such as: tomatoes, eggplant, spinach, arugula, lettuce, carrots, beets, radishes, turnips, butternut squash, acorn squash, leeks, brussels sprouts, kale, cabbage, broccoli, celeriac, and assorted herbs.

This week’s pick includes:

  • green beans
  • bell peppers
  • Italian eggplant
  • green onion
  • poblano peppers
  • tomatoes
  • cucumbers
  • cantaloupe

If you have lots of cucumbers and tomatoes at home, try using them to make this fresh panzanella salad. This recipe is from Leanne Brown’s cookbook, Good and Cheap, which contains recipes for healthy and whole meals designed for people with very tight budgets, particularly those on SNAP/Food Stamp benefits. The complete cookbook is available for free!
